Tarpon Feeding Frenzie My friends the tarpons start out at Rackams they wait all day to receive several snacks from island guests. They know if they hang out  long enough they will get fed! They are very smart fish they wait and watch with those big bug eyes. They are often mistaken as sharks their size is quite intimidating.   At Rackams you can snorkel off their ladder during the day to enjoy the wreck of the Cali, or swim with the tarpons, stay for an incredible sunset, then watch or participate in the feeding of the tarpon, every night at 7:30.  Rackam’s is literally built right on the iron shore, jutting into the sea, so you can’t get any closer to being on the water, and can’t beat the views. Swimming Through the Silver Curtain

Silversides A Cayman Wonder . Tarpons, jacks and groupers soon await a feast with the return of thousands of silvery fish showing up in coastal waters each year between June and August: the silversides. During the daytime, they rest in big schools inside of caverns, swim-throughs, grottoes and wrecks. Their massive schooling behavior makes the little fishes less vulnerable — as their continuous movement could give any lurking creature a headache. Divers love to plan their Cayman diving trips around the arrival of these tiny fish. They are even showing up in the USS Kittiwake as we speak! Not only predators rejoice in their arrival but local dive operators tend to jump for joy! Cayman diving is always spectacular, but the silversides are pure magic. Passenger Pick of the Month Ortanique To  learn more about the story behind Ortanique, so recently we caught up with executive chef Cindy Hutson and co-owner Delius Shirley. Overlooking Camana Bay's harbor on The Crescent, Ortanique prides itself with its mouthwatering menu and in taking local ingredients to the next level.  As this month's Passenger Pick of the Month, we wanted to learn more?  PP :  Cindy, where did you cut your culinary teeth?
