Serves Up Lionfish!


The red Lionfish has become a huge concern for the Caribbean. Normally a native of the Indian and Pacific Oceans, it is believed that six fish were somehow set free in a hurricane in Florida where the epidemic originated.  Lionfish arrived in Cayman waters about (2008) and they continue to multiply and threaten smaller reef fish.


Right now Michael’s Genuine Food and Drink, Guy Harvey’s, Tukka, and Eagle Rays Bar & Grill keep them on their daily menus.

 Participants go out on a two-tank dive to cull Lionfish, which are then cleaned and delivered to the fish market or local restaurants. Lionfish filet is light, delicately flavored and reportedly very good eating. 




Chef Thomas of Michael’s Genuine Food and Drink shared “They are a serious threat to our reefs in the Caribbean, and to our supply of sustainably sourced fish.  Lionfish are gluttonous eaters of juvenile fish and have no natural predators in the area, but they are also delicious.  They have a delicate texture and buttery flavor, so as long as there are lionfish in these waters, we will serve them up, and continue to raise awareness of their impact with the help of the Department of Environment.” This year Michael’s Genuine won “Taste of Cayman” for entering the award winning lion fish sliders.



Chef Ron from Tukka said “Tukka just hit 5,000 lbs. of lion-fish bought in 3 years!  Not bad for a little Aussie Restaurant on the East side.  "We are doing everything we can to educate people on the devastation these poisonous and voracious eating machines are capable of!"  Good thing they taste delicious!  We work closely with the local East End divers to bring us in as many as they can catch.” Ron severs up his famous and extremely tasty Lion-Fish Tacos whole deep-fried Lion-Fish (minus the dangerous spines of course at Eagle Rays every day!)
